Leaves change colour during fall because all the nutrients of the leaves go to the stem, trunk and roots. This allows the plant to store up nutrients that will be required during winter. In the absence of chlorophyll which makes the leaves green, other pigments absorb sunlight and take its place hence the difference in the colour of leaves.
