In my personal experience, the amount of time before Halloween that you can carve a pumpkin without it going bad, will depend on the climate in which you live. If you live in an area that has high levels of frost at night, the closer to Halloween you carve your pumpkin, the better. If it gets ruined by frost it will rot. If you live in a warmer climate you may be able to carve your pumpkin three weeks in advance.

Carved pumpkins begin to dry out, shrivel and get moldy about 48 hours after you carve them, but many people carve them 1 to 2 weeks in advance.
To keep your carved pumpkin looking fresh for longer, put petroleum jelly over the cut edges, and be sure to keep it in a cool place like the refrigerator when not on display.
