It is a French term that refers to a smooth and velvety mixture of cream and chocolate. Although its origin is unclear it is believed that it was invented around 1850. Others though, say it originated from Switzerland as a base for truffles. It is also known as Confectioner's Coating and it's made by heavy/double cream, then pouring it over chopped dark semi-sweet chocolate.
